Do-si-do as couples should be less of a challenge in waltz time than it is in a regular contra, but it really makes the dance dependent on the couple spacing in the circle being consistent. In the many Sicilians where you start with a circle, you can walk directly forward to join hands and circle, so it's a little more straightforward than trying to stop them and go off to the left for the dosido. If the spacing is consistent throughout, then no trouble finding next neighbors, but now it will need more space side to side than you do for a contra. I don't think waltz time is going to give you the snappy effect of California Twirl into couple back to back from a contra; it'll be sloshier. So it's possible that this will work fine if you get the right conditions. I think it would be more resilient against spacing problems to adjust your choreography so you start with the circle left and then do the couple do-si-do (like the opening of "Cranky Ingenuity"); that still gives you keeping the partner connection from the California Twirl and keeping it through the next 8 bars.
