For a caller's throat, Kentucky caller Chris Bischoff recommends Singer's Saving Grace (Google it to find a distributor or retail store). I've not tried it myself, but Chris raves about it. Regarding insurance, often dance organizing groups will carry insurance but I would still recommend callers carry their own liability insurance for gigs such as parties and weddings.
