It's hardly the caller's job, though it sounds like no one else was
taking responsibility. It seems obvious to me that the organizer
should have made an announcement at the break that people who hadn't
paid could pay then. It also sounds like the organizing committee at
the dance you're describing was burnt out.
At our (usually, though not always, quite small) dance, we just leave
out a basket for people to pay, and at the break usually remind
people to do so.
