Al Dean and the All Stars has a great version of Cotton Eyed Joe, at 2:22, that works great for dance.  Completely instrumental.  I have used this version for the couple dance, but have not tried it with the line dance.  This is long enough that most dancers are tired by the end.

I use the version by Asleep at the Wheel because it's good music, and the lyrics don't use the words, "step in what? BULL SH|+!" And it's more than four minutes, which provides a nice interlude length.
